About apizzeria 888 by Sebastian

Apizzeria 888 by Sebastian is owned and operated by one person - Sebastian, a former engineer turned artisan pizzaiolo. After more than 3 years and over 2,000 pizzas of relentless testing, he perfected a unique hybrid fermentation and aging dough process that’s both naturally healthy and incredibly flavorful.

Each dough is aged for weeks, producing a crispy, ultra-thin crust with a true leopard-spotted undercarriage β€” a result nearly impossible to replicate using standard methods. This isn’t mass-produced pizza; it’s a rare, handcrafted experience that feels both personal and timeless.

In an era of machines and fast food, Apizzeria 888 by Sebastian is about connection, craftsmanship, and creating a one-on-one experience with every guest

Great guy, great pizza! One of the best pizzas I’ve ever had. I ate three slices! The sweet tomato-basil sauce, the aged cheese, and the super crispy crust work together perfectly. Make sure to get several pizzas if you have a family or if you have friends coming over, because you will not want to share.

Sebastian elevates pizza to an art. The thin, crispy crust is the platonic ideal of what a pizza crust should be, and he dresses it with a sauce that perfectly blends sweetness and acidity, bringing out the nuance in the carefully selected cheeses he uses. It’s the best pizza in Philly.

Hands down the best pizza in the Philadelphia area. I hesitate to post this because it's a one man operation and I selfishly don't want the word to get out. This pizza is too good to not talk about though. So to start off you could easily miss this place, it's hard to spot off the road. I was walking by and decided to stop in. It's just one guy (Sebastian) and his scratch kitchen. I was hopeful, but cautious when he told me it would be about a 20 min wait. Boy was it worth the wait the honey roni pie was expensive at $33 bucks (most pies are around $25 now anyway), but the quality of ingredients and the time and care this guy takes when making is 2nd to none. The pie came out perfectly cook with just the right amount of char on the crusts. Flavor was out of this world. The only downside is there are limited hours (he's only human) and a limited amount of pies per day that you have to put in an order for early. Good luck!

Apizzeria 888 may be one of the most unique pizza experiences in the region. Sebastian has created a style that doesn’t neatly fit into New York, Neapolitan, or New Haven categories. The pizza is astonishingly thin, beautifully balanced, and packed with character. What makes the experience special, however, is knowing that every pie comes from a single individual who has spent years refining his craft. The shop is modest, but the ambition behind it is enormous. This is the kind of place food lovers are always hoping to discover before everyone else does

888 is THE ULTIMATE HIDDEN GEM in philadelphia and montco. I was curious to try the Roman pizza because no one else makes it but Sebastian. The pie was beyond expectations. Unique crust and fantastic sweet sauce with aged cheese.
